1 cup quinoa
1 cup emmer wheat
Prepare both grains according to package directions.
Mix with cooked grains:
1 cup carrots, shredded
2 bell peppers, diced (yellow, red, or orange)
3 green onions, diced
2 cups mushrooms, chopped
2 T. grated lemon zest
1/2 cup EACH fresh parsley and cilantro, chopped
1 T. cumin
2 t. salt
freshly ground pepper to taste
Dressing:
1/4 cup evoo
2 T. flaxseed oil
1/2 cup lemon juice
2 t. ground turmeric
Put all ingredients in jar and shake well. Pour all on top of veggie mixture and toss well.
Serve warm or cold.
